For that lazy morning sunshine 

Parmesan Crusted Stuffed Tilapia (makes 6 Servings)

Ingredients: 6 tilapia filet, 4 oz green beans, 3 oz sliced carrots, 4 oz bell peppers, 4 oz mayonnaise, 4 oz cream cheese, 2 cloves of garlic, 1 tsp pepper, 1 tsp garlic powder, 1 tsp dried chives and 8 oz parmesan 

Recipe

  1. Puree green beans, carrots, bell peppers and garlic cloves together
  2. Mix with mayo, cream cheese, 4 oz of parmesan, garlic powder, pepper and chives
  3. Lay out tilapia filet on baking sheet with foil
  4. Place about 2-3 tbsp of filling into filet-depends on how big-then roll
  5. Sprinkle with pepper and parmesan and bake at 350 for 15 minutes 
  6. Serve with salad or rice

Creamy Cheese and Vegetable Dip with Homemade Biscuits 

Ingredients: 8 oz of cheddar or pepperjack cheese, 8 oz of cream cheese, carrots, green beans, garlic, and jalepenos 

Recipe: 

  • Puree green beans, carrots, garlic and jalepenos together in blender or food processors 
  • Mix in with cheese and cream cheese-add salt and pepper to taste
  • Place into baking dish and top with more cheese
  • Back for 10 minutes and serve with veggies, biscuits or crackers 

Sauteed Clams in Lime Juice a southeast Asian dish 

Recipe:

  • Saute garlic with 1 teaspoon of oil
  • Take 1 lb of de-shelled clams and 1 green bell pepper and add to pan-cook for about 5 minutes
  • Next add one cup of lime juice and 1.5 teaspoon of fish sauce-cook for another few minutes and remove from heat
  • Serve with rice
