Salmon Stuffed Mushrooms

Ingredients: 1 dozen mushroom caps, 8 oz salmon minced, 2 tbsp mayonnaise, 4 oz shredded mozzarella cheese, pinch of pepper and garlic powder, 2 oz frozen spinach (drained and dried)  

Seafood Lettuce Wraps with Peanut Sauce

Made with Shrimp, tilapia, cucumber, rice noodles and beansprouts-topped with homemade peanut sauce 

Salmon Stuffed Cabbage in Yellow Curry Sauce

Ingredients: 1 whole cabbage, 1 lb napa cabbage, 1 lb salmon, 8 oz shitake mushrooms, 3 cups cooked rice, 4 cloves garlic, 2 tsp pepper, 1 tsp salt, 2 tbsp curry paste, 1 can of coconut milk, 1 tbsp cornstarch and 2 tsp paprika 


  1. Cut out core of cabbage and blanch cabbage leaves for about a minute in boiling water until only the small ones are left that you can’t wrap 
  2. Bake salmon at 350 and pick apart to small pieces once cook
  3. Roughly chop nappa cabbage and dice shitake mushrooms-saute together for 10 minutes
  4. In another pan brown garlic and add nappa cabbage and shitake mushrooms with rice and salmon 
  5. Add paprika, salt and pepper 
  6. In a pot pour entire can of coconut milk in and then add curry paste and cornstarch-cook for 10 minutes
  7. Take a cabbage leaf and add filling and roll-place into a glass baking pan-fill pan with stuffed cabbage leaves
  8. pour curry sauce over cabbage and place in oven to bake for 10-15 minutes at 350-375 degrees

Homemade Chicken Fajita Pasta

Ingredients: 8 oz Penne Pasta, 1 lb of chicken breast (boiled and shredded), 1 bell pepper, 1-16oz can of diced tomatoes, 2 tbsp of fajita or taco seasoning, pinch of salt, pepper chili powder, 8 oz Mexican Cheese blend, 2 cloves of garlic and 1 onion diced 

Homemade Pizza with Rustic Salad and French Bread


Salad: 5 mushrooms sliced, 1 diced Roma tomato, 3oz of fresh sliced mozzarella, 1 head of Romaine lettuce, 1/2 a yellow bell pepper and vinaigrette of choice

Pizza: 1 pack of Trader Joe’s pizza dough, 4 tbsp of BBQ sauce, 1/2 grilled chicken breast chopped, 5 oz spinach, 1/2 diced Roma Tomato, 8 oz shredded mozzarella and 4-5 oz fresh mozzarella sliced, 1 small onion thinly sliced or half of a medium to large one, 1/2 bell pepper thinly sliced, 2-4 mushrooms thinly sliced, 1 tbsp of dried oregano or fresh basil
